    Mary, you can choose to make it with onions or without…

    I make it with onions.

    Let say for 6 eggs:

    half of small Vidalia onion diced
    2 ripe tomatoes diced
    salt, fresh ground black pepper
    6 eggs
    olive oil
    Fresh feta cheese, crumbled by you, right before sprinkling the eggs ;)
    A table spoon of sweet unsalted butter if you wish…

    Saute the onions in olive oil in frying pan. when onions start getting gold add tomatoes, stir and saute until the juice from tomatoes evaporated, add more oil and eggs and stir them with tomatoes, it will cook immediately. Turn the heat off and add butter if you wish or just top it with feta or, both! Bon Appetite! OH, please have a piece of fresh french or Italian bread ready to clean the plate after you finish with eating the eggs, ha-ha… ;) :) :)

    A standard Friday night dinner for Hubby and me is Southwest Omelettes.

    Saute onions, bell peppers and tomatillos in olive oil until golden.(Amount to your liking.)
    Remove from pan and set aside.
    For each omelette, have three eggs scrambled. Add a little more olive oil to the hot pan and pour eggs into it.(We use a cast iron skillet.)
    Season to taste with salt, pepper and cayenne.
    Just as the eggs begin to set, ‘fill’ one half with sauted veggies and slices of extra sharp Cabot white cheddar. Fold the omelette in half and voila! One Southwest omelette! It’s great with homemade salsa too!

    Oh, yes! Yum-yum! I love omelets,they are so versatile! I also use cast iron skillet for omelets and I have another one ONLY for crepes! :) :) Nobody touching it but me!ha-ha…

    Yummmmmm — Now I’m hungry for eggs!!! I haven’t eaten dinner yet, so I think I’ll fix an omelette! 8) Both recipes sound delicious! I agree with you, Julia, about omelettes being so versatile — and a great way to use up leftovers in the fridge! :D

    Exactly , Lynn! It is what I did yesterday at lunch! Had leftovers from roasted chicken, so sauteed onions and peppers added chicken and then it went into the omelet along with provolone :) and sliced green onions :) ))
