“Old Cuban Mojito”

Description from Sarah aka iamhydrogen: Continuation on today's cocktail theme in celebration of summer & the long weekend!

One of my absolute favorites: an Old Cuban is a mojito topped with champagne instead of the traditional seltzer/club soda. Delicious!

Juice of 1/2 a lime
1 tsp superfine sugar or simple syrup
8 - 10 mint leaves
2 oz. white rum (my favorite brand is Flor de Cana)
Chilled champange (I like using cava, which is just Spanish sparkling wine. It's way cheaper & just as tasty).

Muddle the lime juice & sugar in the bottom of a collins glass. Add the mint and lightly muddle again. Add enough ice to fill your glass about 2/3 full. Pour in rum & stir. Top off the drink with champagne. Garnish with mint leaves & lime slice.

    Sounds like everyone’s ready for a weekend!

    For even more spunk, I like to add a “floater” to these: after squeezing the lime, save the remaining shell and flip it inside out; you should have a little lime bowl with the fruit’s skin on the inside. Place it on top of the drink – it’ll float like a little boat, hence the name “floater.” Fill it with dark rum (my favorite is Black Seal). As you drink your drink, the little boat will capsize into the drink, and eventually the dark rum with mix with everything else.
