    Really pretty. I’m a huge moonstone fan. Never cooked with chestnuts before but would like to give it a go this Christmas… has anybody got any good chestnut recipes…sweet or savory?

    Apple-chestnut muffins
    1 egg
    1/2 cup milk
    1/4 cup salad oil
    1 cup chestnuts peeled and chopped fine
    1 medium apple
    1 1/2 c wheat flour
    1/2 cup sugar
    1 tsp baking powder
    1/2 tsp salt
    1/3 c chestnuts chopped fine
    1/2 c brown sugar

    Heat oven to 400 deg F. Spray mini muffin tins with pam
    beat egg stir in milk,oil,chopped chestnuts,chopped apple. Beat in reamiaing ingredients.Make nutty topping by thoroughly mixing chopped chestnuts and brown sugar.Set aside. Fill muffin cups about 3/4 full. Sprinkle about 1/2 tsp of topping on each.Bake 20-25 mins until a toothpick comes out clean. Immediately remove from pan.

    Thanks Alice!!! I love cooking but being in Australia I haven’t had much to do with chestnuts, soooooo…. when you say, chestnuts peeled and chopped, I assume they are raw? Is that right? How do you peel a chestnut? With just a vege peeler? I imagine if they were roasted 1st the skins would come off easily like any other roasted nut. Totally clueless when it comes to chestnuts… lol…. but I hear they are extremely popular over there during the festive season so I am going to give it a go. Thanks again!!
